
Golden Campfire Cookies
I figured I’d bring the campfire to me
These cookies capture that magic of a s’mores by the campfire. Soft, chewy, and filled with gooey marshmallows, melted chocolate, and golden graham cracker bits. Perfect for a quiet afternoon with milk, or a warm treat to share with friends.
The dough comes together entirely by hand. No fancy mixers, just intention and care. Allow it to rest in the fridge. This will result in thick, soft cookies. They will hold just enough structure to perfectly hug the marshmallows and chocolate.
Baked until the edges are lightly golden, these cookies are an elevated take on a childhood favorite. Each bite is playful yet refined, indulgent but approachable.


Ingredients
- 1 cup 2 sticks unsalted butter softened
- ¾ cup granulated sugar
- ¾ cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup graham cracker crumbs
- 1 ½ cups semi-sweet chocolate chips
- 1 cup mini marshmallows
Instructions
- In a medium bowl, whisk together flour, baking soda, salt, and graham cracker crumbs.
- In a large bowl, cream softened butter, granulated sugar, and brown sugar until smooth.
- Mix in eggs one at a time, followed by vanilla.
- Fold in the dry ingredients until just combined.
- Stir in chocolate chips, mini marshmallows, and graham cracker pieces.
- Cover and chill dough for 30 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop dough into rounds and place on sheet, leaving space between.
- Bake 10–12 minutes, until edges are golden and centers are soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
